Grain Bill
9 lbs. pale malt
1 lb. chocolate malt
1 lb. roasted barley
0.5 lb. flaked barley
Mash Schedule
dough in with 14 qts. water at 161° and grain at room temperature to reach saccharification temperature of 150°
hold at 150° for 60 minutes
mash out with 6.5 qts. boiling water to raise temperature to 167°
hold at 167° for 10 minutes
sparge with 167° water to collect 6.5 gallons
Hop Schedule
1.0 oz. pellet Pride of Ringwood (6.9% AA), 60 minutes before end of boil
Yeast and Fermentation
White Labs WLP007 Dry English Ale (maybe WLP009 Australian Ale would be more appropriate given the name, but I didn't have it in stock at the time)
ferment at 67°
