  • Batch Size: 5.5 gallons

  • Boil Time: 60 minutes
  • Evaporation Rate: 1 gal/hr

Grain Bill

  • 9 lbs. pale malt
  • 1 lb. chocolate malt
  • 1 lb. roasted barley
  • 0.5 lb. flaked barley

Mash Schedule

  • dough in with 14 qts. water at 161° and grain at room temperature to reach saccharification temperature of 150°
  • hold at 150° for 60 minutes
  • mash out with 6.5 qts. boiling water to raise temperature to 167°
  • hold at 167° for 10 minutes
  • sparge with 167° water to collect 6.5 gallons

Hop Schedule

  • 1.0 oz. pellet Pride of Ringwood (6.9% AA), 60 minutes before end of boil

Yeast and Fermentation

  • White Labs WLP007 Dry English Ale (maybe WLP009 Australian Ale would be more appropriate given the name, but I didn't have it in stock at the time)
  • ferment at 67°
