Concord Pyment

Ingredients

  • 4 gals. Concord grape juice
  • 15 lbs. wildflower honey

Yeast and Fermentation

  • White Labs WLP720 Sweet Mead/Wine (make a starter!)
  • ferment at 68°

Procedure

Warm 12 lbs. of honey in its container in hot tap water for 15-20 minutes to loosen up. Pour grape juice into fermenter. Pour honey into fermenter. Cap fermenter and shake vigorously to mix and aerate. Add yeast. When fermentation slows, warm the remaining 3 lbs. of honey and add to the fermenter. When fermentation slows again, rack to secondary. It's quite drinkable even when fairly young, and can be bottled after 3-4 months (or more, if you want).
